Blueberry Muffins
Blueberry Muffins
Ingredients:
- 2 cups almond flour
- 3-4 drops of liquid stevia (more or less for taste preference)
- 1 teaspoon baking powder
- 4 room temperature eggs
- ½ cup butter, melted
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup frozen blueberries
INSTRUCTIONS:
- Preheat oven to 350 degrees.
- Line muffin pan with liners.
- In medium bowl, mix together all wet ingredients.
- In large bowl, mix together all dry ingredients. (Except blueberries)
- Add wet ingredients into dry and mix until just combined. Do NOT overmix.
- Fold in blueberries.
- Place mixture evenly into 12 muffin liners, and bake for 20-25 minutes or until golden.
