Breakfast Skillet
Ingredients:
- 2 ounces grass fed ground turkey or beef
- 1 egg
- 1 tsp butter
- 2 cups homemade salsa (recipe below)
- 1/8 avocado, sliced
- 1 minced green onion
HOMEMADE SALSA
- 1 cup diced tomatoes
- ¼ cup diced onions
- Cilantro to taste
- 1 clove of minced garlic
- 1 tbsp lime juice
- 1 small jalapeño diced
- Himalayan sea salt and pepper to taste
INSTRUCTIONS:
- Melt butter in skillet and add turkey/beef, cooking until done
- Add in salsa and mix together, cooking for 2-3 minutes
- Crack an egg on top of mixture and over for approx. 7 minutes until egg white is cooked thru
- Serve with sliced avocado and garnish with fresh cilantro, diced tomatoes and green onions
