Avocado Tuna Salad
Avocado Tuna Salad Recipe

Ingredients:
- 1 1/4 cup spinach, or arugula
- 1/8 avocado, diced
- 1/4 cup celery, finely chopped
- 1 green apple, diced
- 1/2 cup cucumber, peeled & chopped
- 1/4 cup dill, parsley or cilantro, chopped
- 3 ounces tuna packed in water, well drained
Dressing (Serving Size = 2 teaspoons)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon app cider vinegar
- 3/4 teaspoon garlic or onion powder
- 3/4 teaspoon Himalayan sea salt
- 1/4 teaspoon ground cumin
- Ground black pepper, to taste
INSTRUCTIONS:
Salad
- In a large salad bowl, add all salad ingredients.
Dressing
- In a small bowl or measuring cup, whisk together the dressing ingredients.
- Pour 2 teaspoons (1 serving) over salad and gently stir to combine.
This recipe makes 1 serving. This equates to the serving having 3 ounces of Protein, 2 servings of Vegetables, and 1 servings of Fruit and 2 servings of Healthy Fat on the IHC plan.
