Grilled Green Onion Stuffed Chicken Breast
Ingredients:
- 2 boneless and skinless chicken breasts (flattened) approximately 3 ounces each
- 1 bunch green onions
- 1 teaspoon garlic powder
- Himalayan sea salt (to taste)
- Fresh cracked pepper (to taste)
- 2 cups salad or vegetables of choice
- Toothpicks
Instructions:
- Pound your chicken breasts out, ensuring that they're all the same thickness.
- Clean and trim the stems of your green onions and chop them into 4-6 inch pieces.
- Lay the flattened chicken breasts out and sprinkle them with garlic powder, Himalayan sea salt, and pepper.
- Place the green onion stems in the middle of the flattened chicken breasts and gently roll them up. Secure them using toothpicks.
- Add an additional sprinkle of garlic powder, Himalayan sea salt, and pepper on the outside of the now rolled chicken breasts and set aside.
- Grill the chicken breasts for about seven minutes on each side and serve hot with a fresh tossed salad and steamed veggies.
This recipe makes 2 servings. This equates to each serving having 3 ounces of protein and 2 Servings of Vegetables on the IHC plan.
