Lemon Almond Chicken Salad
Ingredients:
- 3 ounces chicken, shredded
- 1/2 cup spring onion, finely chopped
- 6 almonds, ground
- 1 tsp garlic powder
- 2 tsp ground cumin
- 1 tsp coriander
- Juice of one lemon
- Lemon slice for garnish
- 1 1/2 cups of fresh spinach or arugula
INSTRUCTIONS:
- Place chicken, onion, almonds, spices, and lemon juice in large mixing bowl and stir until well combined.
- Serve chilled with a slice of lemon over 1 1/2 cups of spinach or arugula.
This recipe makes 1 serving. This equates to the serving having 3 ounces of protein, 2 servings of vegetables, and 1 serving of essential healthy fat on the IHC Plan.
