MEDITERRANEAN BAKED COD

Mediterranean Baked Cod Recipe

Ingredients:

  •  1 cup grape or cherry tomatoes, cut in half
  •  ½ - 1 cup pitted olives, any variety, cut in half
  •  3 cloves garlic, minced
  •  1 small red onion, sliced thin
  •  ¼ cup capers
  •  1 tbls olive oil
  •  ¼ cup water
  •  1 tsp Italian seasoning
  •  Salt and pepper to taste
  •  1.5 pounds of cod (or another white fish) approx. 5-6 filets

Instructions:

  1. Preheat oven to 400 degrees. Lightly spray a rectangular dish and place washed fish filets inside.
  2. Spread the tomatoes, olives, onion, garlic, and capers on top of filets.
  3. Drizzle olive oil over entire dish.
  4. Sprinkle with Italian seasoning and season with salt and pepper.
  5. Pour water into dish. Bake 15-20 minutes, or until tomatoes and fish are cooked.
