Salmon Florentine
Ingredients:
- 3 oz skinless salmon fillet, rinsed & patted dry
- 1 1/2 cups fresh spinach
- ¼ cup shallots, minced
- 4 garlic cloves, minced
- ¼ cup sun-dried tomatoes, chopped
- ¼ teaspoon red pepper flakes
- Himalayan sea salt and freshly ground black pepper to taste
- 1 teaspoon coconut oil
INSTRUCTIONS:
- Preheat your oven to 350 F.
- Heat the coconut oil in a skillet placed over a medium heat.
- Add the shallots and cook until soft, about 3 minutes, stirring occasionally.
- Add the garlic and cook for another minute. Add the spinach, sun-dried tomatoes, and pepper flakes. Cook for another 2 to 3 minutes and season to taste.
- Remove the vegetables from the heat and set aside.
- Season with Himalayan sea salt and pepper the salmon filet to taste and put it in a baking dish.
- Top the filet with the spinach mixture and place in the oven.
- Bake for about 15 minutes or until the fish is just cooked through.
This recipe makes 1 serving. This equates to the serving having - 1 serving of Protein, 2 servings of Vegetables and 1 serving of Healthy Fat on the IHC plan.
