Paprika-Lemon Chicken Marinade
Ingredients:
- Chicken of your choice
- 1/2 cup olive oil
- Juice from 1 lemon
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 2 garlic cloves, minced
- 1/2 red onion, minced
- 1/4 cup chopped fresh parsley
- Himalayan sea salt and freshly ground black pepper
INSTRUCTIONS:
- In a bowl combine the olive oil, lemon juice, onion, herbs and spices; season to taste.
- Whisk until well mixed and pour over the chicken.
- Marinate in the refrigerator 2 to 8 hours, turning every few hours.
- Cook chicken to your preference or preheat grill to medium-high heat.
- Grill the chicken 5 to 6 minutes per side, depending on the cut, or until cooked through.
- Let the chicken rest 4 to 5 minutes before serving.
Serving Size = 2 teaspoons of marinade and 3 ounces of chicken.
