Isreali Salad
Ingredients:
- 2 c. diced cherry tomatoes
- 2 c. diced English cucumber
- ½ c. diced red bell pepper (optional)
- ¼ c red onion, diced
- ¼ c finely chopped mint
- ¼ c finely chopped parsley
- 2 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- Sea salt, to taste
INSTRUCTIONS:
- Combine all ingredients together in a large bowl. Mix well.
- Season with salt to taste. Refrigerate until ready to serve.
Makes about 2.5 servings
Serving Size = 2 cups (1 serving of vegetables and 1 serving healthy fat)
