Ingredients:

  • 3 eggs, divided
  • 3 tablespoons coconut cream
  • ½ teaspoon baking powder
  • Pinch of Pink Himalayan sea salt
  • Optional: additional seasonings (cinnamon, garlic powder, onion powder, rosemary, thyme, bagel seasoning)

INSTRUCTIONS:

  1. Preheat oven to 325 degrees F. In a small bowl, whisk egg yolks and coconut cream together vigorously until smooth.
  2. In a large bowl, add egg whites and beat using hand mixer (abt 2 minutes) until soft peaks form. During final seconds, add in baking powder and salt.
  3. Carefully fold the yolk mixture into the whites mixture. Combine, but do not over mix. They should stay fluffy. (Add any additional seasoning at this stage).
  4. Drop 8 dollops onto a parchment paper lined sheet. Flatten tops slightly with spoon.  Bake for 22 minutes or until golden brown and fully cooked in center.
