Taco Salad
Taco Salad
Taco meat:
- 1 tablespoon olive oil or avocado oil
- 1 lb ground beef
- 2 tablespoons taco seasoning blend
- 1/2 cup jarred salsa of your choice
- Sea salt to taste
Salad and toppings:
- 1 head romaine lettuce chopped
- 1/4 cup + 1 tablespoon cilantro leaves roughly chopped
- 1 cup grape tomatoes halved
- 1 med/large avocado
- Juice of half a lime
- Sea salt to taste
- 1/4 cup red onion diced
- 1 jalapeno pepper thinly sliced
- Pico De Gallo fresh salsa
Instructions:
- Heat a large skillet with the oil over medium high heat. Add the ground beef and cook until some fat is rendered, breaking up lumps with a spatula. Add the taco seasoning and continue to cook, stirring, until browned. Add the salsa and cook until heated through, then taste and season with salt if desired. Set aside.
- To arrange the salad, place the chopped lettuce in a large serving bowl, or alternatively, divide among 4 single serving bowls. Sprinkle 1/4 cup cilantro over the lettuce, then arrange the tomatoes and cooked beef mixture.
- In a small bowl, mash the avocado together with the lime, an additional tablespoon of cilantro and sea salt, to taste.
- Spoon the guacamole on the salad, then add the red onion and jalapeño pepper.
- Garnish with pico de Gallo if desired. Enjoy!
