Turkey Meatballs With Spicy Tomato Sauce
Ingredients:
- 1 lb (500 g) ground turkey
- 2 + 4 cloves garlic, minced
- Fresh parsley
- 2 tablespoons olive oil
- 1 white onion, chopped
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- Salt and freshly ground pepper
- 1 can (28oz) diced tomatoes
- 1/4 cup chopped fresh parsley, for garnish
INSTRUCTIONS:
For Turkey Meatballs
- To make the turkey meatballs: Preheat your oven to 375°F (190°C). In a large bowl, add the ground turkey, garlic and parsley. Season well with salt and pepper and stir to combine.
- Using 2 tablespoons of the turkey mixture, form into meatballs and transfer to a baking sheet coated with a little oil.
- Bake until the meatballs are cooked through. This should take about 15 minutes.
For Tomato Sauce
- In a saucepan over medium-high heat, warm the oil. Add the onion and garlic and saute until the onion is translucent about 5 minutes.
- Add the red pepper flakes. Season with salt and pepper and saute for about 2 minutes.
- Add the tomatoes with their juices and bring to a boil. Reduce the heat to low and simmer for 25 minutes. Adjust seasoning with salt and pepper.
- Serve the turkey meatballs over bulgur or rice. Ladle tomato sauce on top and garnish with fresh parsley.
