Stuffed Pepper Soup
Ingredients
- 1 pound of lean ground beef
- 1 onion, diced
- 2-3 cloves of garlic, minced
- 1 tsp Italian seasoning
- ½ tsp cumin
- 6 cups beef broth
- 1 can 28 oz diced tomatoes
- 2 green bell peppers
- 1 red or orange bell pepper
- 1 Tbls Worchestire sauce
- 2 cups cauliflower rice
- 2 Tbls fresh parsley
Instructions
- Cook beef, onion, and garlic in a large pot until cooked through. Drain.
- Stir in remaining ingredients and simmer for 20-25 minutes or until peppers are tender.
- Garnish with fresh parsley and enjoy!
