Parsley and Garlic-Rubbed Oven Baked Salmon
Ingredients:
- 4 (6-oz.) Alaska salmon fillets
- 1-lb. asparagus, trimmed
- 2 tablespoons extra virgin olive oil
- Himalayan sea salt and pepper, to taste
- Sliced lemon, for garnish
- Parsley garlic salmon rub:
- 1/4 cup finely chopped fresh parsley
- 6 garlic cloves, minced
- 2 tablespoons butter, melted
- 1 teaspoon Himalayan sea salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- In a small bowl, stir parsley, garlic, melted butter, salt, and pepper together with a fork. Press the rub mixture firmly into the cut side of each salmon filet. Let the salmon rest for about 5 minutes before cooking.
- Place the salmon and asparagus on the baking sheet. Drizzle the asparagus with about 1 tablespoon of olive oil each. Then sprinkle with salt and pepper to taste.
- Place the sheet pan in the oven and bake for about 16-18 minutes, until the salmon flakes easily with a fork.
- Season with additional salt and pepper to taste. Garnish with additional parsley and lemon, as desired, and serve immediately.
