Avocado, Apple And Chicken Salad

Ingredients:
- 3 ounces cooked chicken, finely chopped
- 1 green apple, peeled, cored, and finely chopped1/8 avocado, chopped
- ¼ cup celery, finely chopped
- ¼ cup red onion, finely chopped
- 2 tablespoons fresh parsley, minced
- 1 teaspoon extra-virgin olive oil
- 2 teaspoons fresh lime
- ½ teaspoon garlic powder
- Himalayan sea salt and freshly ground black pepper
- 1 1/2 cups lettuce of choice
INSTRUCTIONS:
- In a bowl, whisk together the extra virgin olive oil, lime juice, garlic powder, parsley, and season with Himalayan sea salt and pepper to taste.
- Combine all the remaining ingredients in a large bowl.
- Pour the dressing over the chicken-avocado mixture.
- Toss gently until everything is well coated.
- Serve over 1 1/2 cups of your favorite lettuce.
