Avocado, Apple And Chicken Salad

Ingredients:

  • 3 ounces cooked chicken, finely chopped
  • 1 green apple, peeled, cored, and finely chopped1/8 avocado, chopped
  • ¼ cup celery, finely chopped
  • ¼ cup red onion, finely chopped
  • 2 tablespoons fresh parsley, minced
  • 1 teaspoon extra-virgin olive oil
  • 2 teaspoons fresh lime
  • ½ teaspoon garlic powder
  • Himalayan sea salt and freshly ground       black pepper
  • 1 1/2 cups lettuce of choice

INSTRUCTIONS:

  1. In a bowl, whisk together the extra virgin olive oil, lime juice, garlic powder, parsley, and season with Himalayan sea salt and pepper to taste.
  2. Combine all the remaining ingredients in a large bowl.
  3. Pour the dressing over the chicken-avocado mixture.
  4. Toss gently until everything is well coated.
  5. Serve over 1 1/2 cups of your favorite lettuce.

This recipe makes 1 serving. This equates to the serving having 3 ounces of Protein, 1 serving of fruit, 2 servings of Vegetables, and 2 Essential Fatty Acids on the IHC plan.
