Avocado Tuna Salad Recipe

Avocado Tuna Salad

Ingredients:

  • 1 1/4 cup spinach, or arugula
  • 1/8 avocado, diced
  • 1/4 cup celery, finely chopped
  • 1 green apple, diced
  • 1/2 cup cucumber, peeled & chopped
  • 1/4 cup dill, parsley or cilantro, chopped
  • 3 ounces tuna packed in water, well drained

Dressing (Serving Size = 2 teaspoons)

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon app cider vinegar
  • 3/4 teaspoon garlic or onion powder
  • 3/4 teaspoon Himalayan sea salt
  • 1/4 teaspoon ground cumin
  • Ground black pepper, to taste

INSTRUCTIONS:

Salad

  1. In a large salad bowl, add all salad ingredients.

Dressing

  1. In a small bowl or measuring cup, whisk together the dressing ingredients.
  2. Pour 2 teaspoons (1 serving) over salad and gently stir to combine.

This recipe makes 1 serving. This equates to the serving having 3 ounces of Protein, 2 servings of Vegetables, and 1 servings of Fruit and 2 servings of Healthy Fat on the IHC plan.
