Cauliflower Chicken Fried Rice

Ingredients:
- 2 Tbsp sesame oil (divided)
- 1 lb boneless skinless chicken breasts cut into 1'' pieces
- 2-3 cloves of garlic
- ½ cup diced red and green bell peppers
- ½ cup diced onions
- ¼ cup small-diced broccoli
- 2 eggs beaten
- 2 Tbsp braggs amino
- 2 pkg's of cooked riced cauliflower
- 2 green onion minced
- ¼ tsp black pepper
INSTRUCTIONS:
- Heat 1 Tbsp sesame oil over medium heat. Add chicken, garlic and veggies. Cook until chicken is cooked through and veggies are tender.
- Add the rest of the sesame oil and riced cauliflower. Stir fry. Watch this carefully so the cauliflower does not get mushy.
- Make a "well" in the middle of the cauliflower mixture. Add eggs. Stir gently until eggs are fluffy and cooked. Mix with Chicken and "rice" mixture. Stir in braggs aminos and pepper.
- Top with green onions and serve immediately. Add more braggs, to taste.
