Cilantro-Lime Chicken With Avocado Salsa

Cilantro Lime Chicken With Avocado Salsa Recipe

Ingredients:

  • 4 skinless, boneless chicken breasts
  • 3 tbsp. olive oil
  • 4 tbsp. chopped cilantro
  • 3 garlic cloves, crushed
  • 3 tbsp. lime juice
  • 1 tsp. salt

Avocado Salsa Ingredients:

  • 1 cup cherry tomatoes, chopped
  • 1 avocado, cubed
  • 1 red onion, finely chopped
  • 1 jalapeño, finely chopped
  • Small handful cilantro leaves
  • 1 tbsp. olive oil
  • 1-2 tbsp. lime juice, to taste
  • Salt to taste

INSTRUCTIONS:

  1. Combine the olive oil, chopped cilantro, garlic, lime juice and salt and pour over the chicken. Allow to marinate for 5-10 minutes.
  2. Cook the chicken in a hot pan until cooked through, about 5-7 minutes each side. Remove from heat and allow to rest for 5 minutes.
  3. To make the salsa, combine all of the ingredients and mix well.
  4. Serve the cooked chicken with the avocado salsa.

Serving Size = 3 ounces of chicken with 1/8 avocado
