Cilantro Lime Chicken Burgers With Avocado Salsa
Ingredients:
For the Chicken Burgers
- 1 pound ground chicken, (preferably organic)
- 1 lime, juiced
- 1/3 cup fresh cilantro, chopped
- 3 garlic cloves, minced
- 1/2 tablespoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Avocado Salsa
- 1 medium-large ripe avocado, diced
- 1/2 cup red onion, diced
- 1/3 cup fresh cilantro, chopped
- 1/2 lime, juiced
- Himalayan sea salt, to taste
INSTRUCTIONS:
- Oil the grill grates and preheat the grill to medium-high heat.
- In a medium size bowl, with your hands mix together ground chicken, lime juice, chopped cilantro, minced garlic, cumin, salt, and black pepper. Be careful not to overhandle the mixture. Form the chicken mixture into 6 patties and place them on a baking sheet.
- Grill the patties for 14-20 minutes, flipping halfway through. The cooking time depends on how thick your patties are as well as the grill you have. Check the internal temperature of your patties at 14 minutes. It should reach at least 165 degrees Fahrenheit.
- While the burgers are cooking, make the avocado salsa. Combine the diced avocado, red onion, cilantro, lime juice, and salt in a small bowl. Once the burgers are cooked, top the burgers with avocado salsa, and serve with lettuce "buns".
