Cloud Bread
Ingredients:
- 3 eggs, divided
- 3 tablespoons coconut cream
- ½ teaspoon baking powder
- Pinch of Pink Himalayan sea salt
- Optional: additional seasonings (cinnamon, garlic powder, onion powder, rosemary, thyme, bagel seasoning)
Instructions:
- Preheat oven to 325 degrees F. In a small bowl, whisk egg yolks and coconut cream together vigorously until smooth.
- In a large bowl, add egg whites and beat using a hand mixer (abt 2 minutes) until soft peaks form. During the final seconds, add in baking powder and salt.
- Carefully fold the yolk mixture into the whites mixture. Combine, but do not over mix. They should stay fluffy. (Add any additional seasoning at this stage).
- Drop 8 dollops onto a parchment paper-lined sheet. Flatten tops slightly with a spoon. Bake for 22 minutes or until golden brown and fully cooked in the center.
