Easy Chicken Fajitas
Ingredients:
- 1 pound (450g) shredded chicken
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon Himalayan sea salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil, divided
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
INSTRUCTIONS:
- To make the skillet chicken fajita recipe: In a large bowl add the shredded chicken, chili powder, paprika, onion powder, cumin, garlic powder, and salt and pepper. Give a quick stir and set aside.
- In a medium-sized skillet over medium-high heat, add 1 tablespoon olive oil, bell peppers, and onion. Saute until the bell peppers are tender - about 5-7 minutes. Push to the side of the skillet. Add 1 tablespoon olive oil and seasoned chicken and cook for 2-3 minutes, stirring regularly. Combine with bell peppers and onion, then cook 1 minute more.
- Serve the skillet chicken fajitas in tortillas with cilantro and a squeeze of lemon juice. Enjoy!
