Easy Salmon Puttanesca

Easy Salmon Puttanesca

Ingredients:

Puttanesca Sauce:

  • 2 cloves minced garlic
  • ½ cup sun-dried tomatoes
  • ½ roma tomatoes
  • 1 tsp EVOO
  • 1/3 cup chopped onion
  • 1 tsp fresh lemon juice
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp red pepper flakes
  • *Optional: 6 Kalamata olives

Salmon:

  • 3 ounces wild caught salmon
  • ½ tsp garlic powder
  • Salt and Pepper to taste

INSTRUCTIONS:

  1. In a food processor or high-speed blender, combine all sauce ingredients and pulse for 1-2 minutes. It does not need to be fully smooth, so do not over mix.
  2.  Transfer sauce mixture to a medium sauce pan and simmer over low heat for 10 minutes.
  3.  Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
  4.  Sprinkle salmon with spices.
  5.  Place salmon in oven and cook through. Timing will vary depending on thickness, but should be 5-10 minutes.
  6.  Place salmon on a plate, top with puttanesca sauce. Serve with your choice of plan approved vegetables!
