Easy Salmon Puttanesca
Ingredients:
Puttanesca Sauce:
- 2 cloves minced garlic
- ½ cup sun-dried tomatoes
- ½ roma tomatoes
- 1 tsp EVOO
- 1/3 cup chopped onion
- 1 tsp fresh lemon juice
- 1 tsp dried parsley
- 1 tsp dried oregano
- ½ tsp dried basil
- ½ tsp red pepper flakes
- *Optional: 6 Kalamata olives
Salmon:
- 3 ounces wild caught salmon
- ½ tsp garlic powder
- Salt and Pepper to taste
INSTRUCTIONS:
- In a food processor or high-speed blender, combine all sauce ingredients and pulse for 1-2 minutes. It does not need to be fully smooth, so do not over mix.
- Transfer sauce mixture to a medium sauce pan and simmer over low heat for 10 minutes.
- Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
- Sprinkle salmon with spices.
- Place salmon in oven and cook through. Timing will vary depending on thickness, but should be 5-10 minutes.
- Place salmon on a plate, top with puttanesca sauce. Serve with your choice of plan approved vegetables!
