Egg and Vegetable Basil Scramble
Ingredients:
- 2 eggs
- 1 cup mushrooms
- ½ cup green onion...
- 1 teaspoon coconut oil
- 1/8 avocado
- ½ cup tomato
- Fresh basil, for garnish
- Himalayan sea salt and pepper, to taste
INSTRUCTIONS:
- In a medium to large skillet, scramble the eggs, mushrooms, and green onions in the coconut oil.
- Once done, transfer to a plate and top with the avocado, tomato and basil.
- Add Himalayan sea salt and pepper to taste and enjoy.
- Add pepper to taste.
On IHC's plan this would count as 2 servings of vegetables, 2 ounces of protein and 2 serving of essential fatty acids. -Enjoy!!
