French Onion Soup

Ingredients:

  • 5 onions
  • 3 cloves garlic
  • 4 cups beef broth
  • 1 ½ tbsp almond flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2-3 drops liquid stevia
  • 1 tsp salt
  • ½ tsp black pepper

INSTRUCTIONS:

  1. Peel and slice onions very thinly
  2. In a large pot, melt butter over low heat, and then add olive oil. Add in sliced onions, salt and liquid stevia. Stir and cover. Cook for 20 minutes, stirring occasionally.
  3. Peel and mice garlic, adding it to the cooked onions. Continue to cook without a lid until you get a deep golden brown (but not burnt) color.
  4. Add in almond flour, stir. Pour in beef broth, stir. Cover and cook an additional 20 minutes. Serve hot.
