Garlicky Spinach, Tomato and Egg Scramble
Ingredients:
- 2 whole eggs
- 1 cup fresh spinach
- 3 cloves garlic, chopped
- 1/2 teaspoon coconut oil
- 1/8 cup chicken broth
- 1/2 cup cherry tomatoes
- 1/2 cup salsa, NO sugar
- 1/8 avocado
INSTRUCTIONS:
- Sauté the garlic in the coconut oil over low to medium heat.
- Add the spinach and chicken broth. Cook until the spinach is completely wilted.
- Stir in the eggs and scramble everything together until the eggs are completely cooked,
- Top with cherry tomatoes and salsa.
This recipe makes 1 serving. This equates to the serving having - 3 ounces of Protein, 2 servings of vegetables, and 1.5 serving of Healthy Fat on the IHC.
