Grilled NY Strip Steak with Peppers and Onions
Ingredients:
- 2 NY strip steaks
- 3 bell peppers, any variety, thinly sliced
- 1 onion, thinly sliced
- 3-4 garlic cloves, minced
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp oregano
- 2 tbsp olive oil or grapeseed oil
- 2 tbsp sherry vinegar
- Pink Himalayan sea sale and fresh black pepper, to taste
Instructions:
- Preheat grill to medium high heat.
- Mix paprika, cumin, oregano and salt/pepper together, rubbing HALF onto steaks.
- Place steaks on grill and cook 6-8 minutes, turning once. Remove and let rest.
- Combine the sliced peppers, onions and garlic in a bowl. Sprinkle with remaining seasoning and mix well.
- Heat olive oil or grapeseed oil in a skillet over medium high heat. Add pepper mixture and saute for 7 to 10 minutes.
- Add vinegar to pepper mixture and cook an additional 2 minutes.
- Thinly slice steaks and serve over pepper mixture.
