Lemon Almond Chicken Salad Recipe

Ingredients:

  • 3 ounces chicken, shredded
  • 1/2 cup spring onion, finely chopped
  • 6 almonds, ground
  • 1 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp coriander
  • Juice of one lemon
  • Lemon slice for garnish
  • 1 1/2 cups of fresh spinach or arugula

INSTRUCTIONS:

  1. Place chicken, onion, almonds, spices, and lemon juice in large mixing bowl and stir until well combined.
  2. Serve chilled with a slice of lemon over 1 1/2 cups of spinach or arugula.

This recipe makes 1 serving. This equates to the serving having 3 ounces of protein, 2 servings of vegetables, and 1 serving of essential healthy fat on the IHC Plan.
