Mashed No-Tatoes

Ingredients:

  • 4 Cups of Cauliflower, cut into florets
  • 2 Tablespoons real butter
  • Sea salt and black pepper to taste
  • 1-2 cloves of garlic (optional)

INSTRUCTIONS:

  1. Steam cauliflower until very soft
  2. Place steamed cauliflower, butter, salt, pepper, and garlic (if desired) into food processor
  3. Blend until desired consistency is reached

This recipe makes 4 servings. This equates to the serving having 1 serving of vegetable, and 1.5 servings of Healthy Fat on the IHC plan.
