Mediterranean Baked Cod
MEDITERRANEAN BAKED COD
Ingredients:
- 1 cup grape or cherry tomatoes, cut in half
- ½ - 1 cup pitted olives, any variety, cut in half
- 3 cloves garlic, minced
- 1 small red onion, sliced thin
- ¼ cup capers
- 1 tbls olive oil
- ¼ cup water
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1.5 pounds of cod (or another white fish) approx. 5-6 filets
Instructions:
- Preheat oven to 400 degrees. Lightly spray a rectangular dish and place washed fish filets inside.
- Spread the tomatoes, olives, onion, garlic, and capers on top of filets.
- Drizzle olive oil over entire dish.
- Sprinkle with Italian seasoning and season with salt and pepper.
- Pour water into dish. Bake 15-20 minutes, or until tomatoes and fish are cooked.
