Queso Dip
Ingredients:
- 1 cup organic raw unsalted cashews (if you have a high speed blender you don't even have to soak them! If you don't have a high speed blender, you'll want to soak your cashews in water overnight, or do a quick soak in boiling water for 1 hour.
- ½ cup organic chicken bone broth
- 4-ounce can organic diced green chiles (the chiles AND the juice in the can)
- 1 teaspoon taco seasoning (sugar free)
- Pink Himalayan Sea Salt to taste
INSTRUCTIONS:
- Combine all ingredients in your high speed blender. Blend on high for 90 seconds.
- Serve room temperature, or heat on the stove to serve warm. If heating in the microwave, do it in 10 second intervals stirring after frequently to avoid it getting chunky.
- Garnish with diced tomatoes, jalapenos and/or green onions.
- Use as a vegetable dip or sauce on your favorite Mexican dish.
- Will keep in an airtight refrigerator for 7 days.
