Taco Salad

Taco meat:

  • 1 tablespoon olive oil or avocado oil
  • 1 lb ground beef
  • 2 tablespoons taco seasoning blend
  • 1/2 cup jarred salsa of your choice
  • Sea salt to taste

Salad and toppings:

  • 1 head romaine lettuce chopped
  • 1/4 cup + 1 tablespoon cilantro leaves roughly chopped
  • 1 cup grape tomatoes halved
  • 1 med/large avocado
  • Juice of half a lime
  • Sea salt to taste
  • 1/4 cup red onion diced
  • 1 jalapeno pepper thinly sliced
  • Pico De Gallo fresh salsa

Instructions:

  1. Heat a large skillet with the oil over medium high heat. Add the ground beef and cook until some fat is rendered, breaking up lumps with a spatula. Add the taco seasoning and continue to cook, stirring, until browned. Add the salsa and cook until heated through, then taste and season with salt if desired. Set aside.
  2. To arrange the salad, place the chopped lettuce in a large serving bowl, or alternatively, divide among 4 single serving bowls. Sprinkle 1/4 cup cilantro over the lettuce, then arrange the tomatoes and cooked beef mixture.
  3. In a small bowl, mash the avocado together with the lime, an additional tablespoon of cilantro and sea salt, to taste.
  4. Spoon the guacamole on the salad, then add the red onion and jalapeño pepper.
  5. Garnish with pico de Gallo if desired. Enjoy!
