Tuna Patties
Ingredients:
- 3 (5 oz.) cans water packed tuna
- 3 large eggs
- 1/3 cup finely chopped onion
- 1 Tbsp fresh squeezed lemon juice
- 1 tsp dried parsley
- 1/2 tsp dried dill
- 1 tsp garlic powder
- 1 1/2 Tbsp coconut oil for cooking
INSTRUCTIONS:
- Stir drained tuna, eggs, onion, and spices in a medium mixing bowl until well combined.
- Separate mixture into 5 equal portions and form into small patties using hands (about 1/2 inches in diameter).
- Cook in skillet using coconut oil until cooked through and slightly browned on outside.
** TIP: Serve over spinach or arugula
This recipe makes 5 servings with a serving size of 3 ounces. This equates to the serving having 3 ounces of protein, and 1 servings of healthy fat on the IHC plan.
