Unstuffed Cabbage Soup
Ingredients:
- 2 packages riced cauliflower (or 14 ounces)
- 2 tablespoons grapeseed
- 1 small onion
- 3-4 cloves garlic
- 1 cup diced celery
- 2 pounds lean ground beef or ground turkey
- 1 teaspoon Himalayan salt
- dash freshly ground black pepper
- 6-8 roma tomatoes, diced
- 3 tablespoons Worcestershire sauce
- 32 ounces chicken bone broth (sugar-free)
- 1 head cabbage sliced into strips
INSTRUCTIONS:
- In large stock pot, heat oil and saute onions, celery and garlic until tender.
- Add ground beef to stock pot and season with salt and pepper. Cook until browned.
- Stir in tomatoes, Worcestershire sauce, and chicken broth. Bring to a simmer.
- Add the cabbage and stir in. Cover and cook on medium low for about 30 minutes or until cabbage has softened.
- Stir in Cauliflower Rice if using. Add additional chicken broth, if desired. Simmer for another 5-10 minutes.
