Unstuffed Cabbage Soup

Unstuffed Cabbage Soup

Ingredients:

  • 2 packages riced cauliflower (or 14 ounces)
  • 2 tablespoons grapeseed
  • 1 small onion
  • 3-4 cloves garlic
  • 1 cup diced celery
  • 2 pounds lean ground beef or ground turkey
  • 1 teaspoon Himalayan salt
  • dash freshly ground black pepper
  • 6-8 roma tomatoes, diced
  • 3 tablespoons Worcestershire sauce
  • 32 ounces chicken bone broth (sugar-free)
  • 1 head cabbage sliced into strips

INSTRUCTIONS:

  1. In large stock pot, heat oil and saute onions, celery and garlic until tender.
  2. Add ground beef to stock pot and season with salt and pepper. Cook until browned.
  3. Stir in tomatoes, Worcestershire sauce, and chicken broth. Bring to a simmer.
  4. Add the cabbage and stir in. Cover and cook on medium low for about 30 minutes or until cabbage has softened.
  5. Stir in Cauliflower Rice if using. Add additional chicken broth, if desired. Simmer for another 5-10 minutes.
